Glucono-δ-lactone is referred to as lactone or GDL, molecular formula C6Hl0O6, relative molecular mass 178.14. White crystal or white crystalline powder, almost odorless, taste sweet after acid. Easily soluble in water. Glucono-δ-lactone is used as a coagulant, mainly for the production of tofu, but also as a protein coagulant for dairy products.

Traits

White crystalline or crystalline powder, almost odorless, taste first sweet and then sour (different from the taste of gluconic acid). It is readily soluble in water (60g/100mL), slightly soluble in ethanol (1g/100mL), practically insoluble in ether, and hydrolyzes in water to an equilibrium mixture of gluconic acid and its δ-lactone and r-lactones. The pH of 1% aqueous solution is equal to 3.5, and becomes pH2.5 after 2h. This product is coated with 5% to 10% calcium stearate, even if used in hygroscopic products, it is very stable. It decomposes at about 153°C.

preparation method

(1) decomposing calcium gluconate with acid, decalcification by ion exchange resin, vacuum concentrating gluconic acid solution to about 80% at 70 ℃, adding gluconic acid-δ-lactone seed crystal, and continuing vacuum evaporation at 40~45 ℃. when 1/2 gluconic acid crystallizes in the form of internal ester, evaporation is stopped, ion separation is carried out, washed and dried with cold water to obtain the finished product.

(2) directly with gluconic acid solution, 40~45 DEG C under reduced pressure concentration after further prepared.

identification method

(1) Add 1 drop of ferric chloride solution (1 10) to 1mL of this product solution (1 50), which is dark yellow.

(2) Add 0.7mL acetic acid and 1mL newly distilled phenylhydrazine to 5mL of this product solution (10), heat it on a water bath for 30min, cool it and scrape the inner wall with a glass rod to promote crystallization. The melting point of the resulting crystals was 196-202°C.
