Gluconate-δ-lactone is abbreviated as lactone or GDL, molecular formula C6Hl0O6, relative molecular mass 178.14. White crystal or white crystalline powder, almost odorless, with a sweet taste and then a sour taste. soluble in water. Gluconic acid-δ-lactone is used as a coagulant, mainly used in the production of tofu, and also as a protein coagulant in dairy products.

Properties

White crystals or crystalline powder, almost odorless, the taste is first sweet and then sour (different from the taste of gluconic acid). Easily soluble in water (60g/100mL), slightly soluble in ethanol (1g/100mL), almost insoluble in ether, and hydrolyzed in water to a balanced mixture of gluconic acid and its δ-lactone and r-lactone. The pH of 1% aqueous solution is equal to 3.5, and it becomes pH 2.5 after 2h. After this product is coated with 5%~10% calcium stearate, it is very stable even if it is used in hygroscopic products. It decomposes at about 153°C.

Method of Making

(1) Calcium gluconate is decomposed by acid, decalcified by ion exchange resin, the gluconic acid solution is vacuum concentrated to about 80% below 70℃, and the seed crystals of gluconic acid-δ-lactone are put in Continue to evaporate in vacuum at 40~45°C. When 1/2 of the gluconic acid crystallizes as lactone, stop the evaporation, separate the ions, wash with cold water, and dry to obtain the finished product.

(2) Directly use gluconic acid solution and concentrate it under reduced pressure at 40~45℃ to make further.

Identification method

(1) Add 1 drop of ferric chloride solution (1+10) to 1mL of this product solution (1+50), which is dark yellow.

(2) Add 0.7mL of acetic acid and 1mL of freshly distilled phenylhydrazine to 5mL of this product solution (1+10), heat on a water bath for 30 minutes, cool and scrape the inner wall with a glass rod to promote crystallization. The melting point of the formed crystal is 196~202℃.
