Maltose (maltose) is a disaccharide, also known as maltodisaccharide, which is composed of two glucose units linked by alpha -1,4 glycosidic bonds. There are two isomers, α-and β-isomers, depending on the position of the C1 hydroxyl group. According to the different mass fraction of maltose, maltose syrup can be divided into normal maltose syrup, high maltose syrup and ultra high maltose syrup.
