
Gluconic Acid
Gluconic acid is an aldonic acid formed by replacing the aldehyde group at position 1 of glucose with a carboxyl group. Type D is produced in large quantities by gluconic acid fermentation of the mold Aspergillus niger (Asp-ergilus niger, etc.), Acetobacter xylinum, and Gluconobacter (Acetobacterxylinum, Gluconobacter, etc.). Glucose oxidase derived from Penicillium notatum can oxidize β-D-glucose to δ-gluconolactone.
